Calm, balanced, less fearful and aggressive compared to standard turkeys. Gets along well in mixed flocks, shows moderate activity, strong brooding instinct in females.
Noir du Bourbonnais — French breed line of meat direction, medium-sized turkey of compact, strong build with well-developed musculature of the chest and thighs. Live weight of males 4.5–6.0 kg (ideal 5.0–5.5 kg), females 3.0–4.2 kg (ideal 3.2–3.8 kg). Body length of males 850–1050 mm, females 700–850 mm. The body is wide, deep, cylindrical in shape, horizontal in stance, with a wide straight back, very wide rounded chest, short strong legs. The head is small, narrow, dry, with bright red or red-violet bare skin, strongly developed corals in males. The beak is short, dark horn or black-slate color. The eyes are large, dark brown to black. The neck is of medium length (180–240 mm), slightly curved, with red warts. The wings are short and wide. The tail is wide, fan-shaped. The plumage is exclusively black (noir corbeau) with an intense green-violet or bronze-green metallic sheen, the underdown is dark gray. White feathers or other shades are a disqualifying fault. It differs from the wild turkey in smaller size, compactness, completely black plumage and short legs.
